Roasted Butternut Squash

Butternut squash has replaced sweet potatoes on my favorite list.  I can have two cups cubed for only 133 calories and 33 grams of carbs! I don’t have much time in the kitchen to battle with cutting up a hard squash so I buy mine fresh and cubed at Costco and prep the whole package at once.

Recipe Instructions:

  1. Preheat oven to 350 degrees Fahrenheit
  2. Spray casserole pan with cooking spray of your choice (I use coconut oil spray or olive oil spray)
  3. Dump cubed squash in pan
  4. Spray squash cubes generously with cooking oil
  5. Season generously with garlic powder, cumin, chili powder, paprika (extra generous), sea salt (less generous), pepper and cinnamon (less generous)
  6. Use your hands or large spoon and mix up squash
  7. Spray again with cooking oil
  8. Bake at 350 for approximately 45 minutes or until cubes are soft (more or less time depending on the size of your cubes)
  9. Enjoy!
