How to stay on track with your nutrition while traveling

I hear from a lot of people that they’re not ready to start the challenge group or their diet because they have a vacation scheduled. Well that’s not really a very good excuse. I have gone on two vacations now while prepping for my bikini competitions and had a blast on both. The key is to plan and prepare ahead of time.  I am not currently in competition prep but I do still try to maintain a healthy lifestyle and do not binge on vacation. You can’t outwork a bad diet and I don’t want to come back 10 pounds heavier. So in this video I share some tips that I am doing for my up coming memorial day trip to Cape Cod for my sister-in-law’s wedding. ​​

Chocolate Fudge No-Bake Cookies

WARNING – This recipe is for true chocolate lovers only!   If you don’t’ like deep, dark rich chocolate then you will not like this recipe.

Chocolate Cookies

 

I found this recipe on the recipe insert that was shipped with my Shakeology and modified it to fit my needs.  The original recipe called for regular peanut butter and I substituted for powdered peanut butter to lower calories and fat while increasing serving size.

What you need:

  • 1 scoop chocolate Shakeology  (This can be purchased from my website by clicking HERE)
  • 1 shakeology scoopful;of powdered peanut butter
  • 1 shakeology scoopful of rolled oats
  • 1 tsp organic honey
  • 1-4 tbsp. of cashew milk (for consistency only)

Chocolate No-Bake Cookies

Directions:

  1. Add Shakeology, peanut butter and rolled oats to bowl and mix well.
  2. Add honey and mix well
  3. Add cashew milk a few drops at a time to make firm dough-like consistency
  4. Divide into 8 drop cookies, refrigerate and enjoy!

Nutrition Facts (Per Cookie):

62 Calories, 8g Carbs, 4g Protein, 1g Fat

3 Ingredient Protein Pancakes

Proteins are an essential part of our diet and are the building blocks of our body.  I like to start my day off right with a breakfast high in protein.  I am not a huge fan of meat and eggs in the morning, and have a little bit of a sweat tooth, so I make a lot of protein pancakes and protein muffins.  Whenever I have an overly ripe banana sitting around and not much time I like to whip up these simple three ingredient protein pancakes.  Top them with a little bit of coconut butter to get some healthy fat in your diet and you are all set to crush your day!

What you need:

  • 1 Scoop Whey Protein Powder (Flavor of your choice)
  • 3 egg whites (can use liquid egg whites)
  • 75 grams of ripe banana

3 Ingredient Pancakes: Banana, Egg Whites and Protein Powder

 

Directions:

  1. Smash the banana until smooth
  2. Mix in egg whites and whisk
  3. Add protein powder and mix

Mix all ingredients until smooth

 

Pour batter on preheated griddle to make 3-6 thin protein pancakes and enjoy!

251 Calories, 41g Protein, 19g Carbs, 0g Fat

Motherhood

Being a mom is hard work. This blog is really great at putting things into perspective and adding a little humor. I found true joy recently as a mom when I stopped comparing myself to other moms and accepted who I am. I still find inspiration in others moms and try to improve on my approach (yelling less, more patients, etc.) but don’t measure my worth against them. I am a very unique individual and mom and my boys would have it no other way. Michelle is my friend and one of the many moms that inspires me to be better. Her blog is great!

Motherhood….

  • it ain’t for the faint of heart
  • it is often thankless
  • it is beautiful (and it is a mess)
  • is not the same for everyone – it comes dressed up in different clothes, is achieved through many different methods and definitely doesn’t fit into some mold or come from a cookie cutter
  • it is the hardest and best job you’ll ever have (unless your job is giving away someone else’s money to help worthy causes and then it might be a tie)
  • it is so many things and is so simple all at once

The list could go on and no doubt, having just passed Mother’s Day, your own ideas and feelings about motherhood are fresh in your mind. Here’s what I’ve been thinking.

Happy Mother’s Day

Today I woke up happy and thankful. God has blessed me with a beautiful healthy family and I am grateful for that.  I love being a mom!  My boys make my life complete.

 I recently found myself consumed with work, my fitness competition and myself.  I was too busy to play with my kids or help them search for a college.  The idea of volunteering at school stressed me out because I just didn’t have time.  All I ever said to my boys was “no, I’m too busy” or “I don’t have time for that!” Thanks to my hardworking husband and a close friend that pushed me to explore Beachbody Coaching,  I found a career that can allow the flexibility to finally just start being a mom and wife.  I am going to cook my kids breakfast, visit colleges, go to the pool on a weekday, read at their school, drive them to sports camps all summer and just plain be there!  I have only 2 weeks left at my full-time job as an engineering group leader and I could not be more thrilled.  My passion for fitness and helping others is my new career and I plan on working only 20 hours per week from home.  I currently work 40+ hours with a 1 hour commute each way.  My current schedule has me leaving the house by 5am and returning at 5pm M-F.  ONLY 10 MORE DAYS OF THAT!!  Thank you Beachbody for this amazing career that allows my to live my life by design!  HAPPY MOTHER’S DAY!  This mamma is happy and I just wanted to share.
